Soup series - Carrot and Lentil Soup Featured

Carrots and lentils are a lovely combination and are so delicious together. 

• 1 cup dry, rinsed lentils
• 1 cup dry, rinsed lentils
• 1 cup carrots, peeled and diced
• 1 small onion, finely chopped
• 34 fl oz (4 1/4 cups) of water
• 1 tbsp olive oil

In a large saucepan, gently sauté the onion in the oil, until soft.
Add the lentils, carrots and water.
Bring to the boil.
Reduce the heat, cover and simmer for 1-1 1/2 hours, until the lentils are soft.
If necessary, you can puree the soup once it’s cool, adding a little water to thin the mixture.
