Cut a piece of cucumber (skin-on) of about 10cm’s and scoop out the inside flesh of the cucumber, leaving one side of the cucumber sealed. Add the cucumber flesh to the avocado.
Finely chop up cherry tomatoes and add to the avocado and cucumber. Mix together.
Now scoop your avocado mix into the hollowed out cucumber and seal with Glad wrap.
Depending on the amount of avocado mix, you could make a couple of cucumber pieces.
Finish off the lunchbox with a handful of raw, unsalted cashew nuts and a guava roll (preferably sugar & preservative free)
