Just leave the lamb chops with its marinade out and make the rest of the dressing with the chopped mint, parsley. I replace the pomegranate seeds with cranberries (really great) and the flaked almonds gives a lovely crunch. I then add anything from panfried strips of chicken or roasted cubed butternut.
A simple one that I enjoy is to add red pesto (pesto princess makes different types of pesto, one is called 'red pesto' made with red peppers), and some fried chicken pieces.
Chop up some chicken breast into bite sized pieces (or smaller), and fry lightly (i genearlly add some pesto to that as well). Make the couscous, stir in some pesto, add the chicken and voila!

Another nice couscous salad is one they do at WW and checkers - drizzle some lemon juice over the couscous, and pieces of feta, some smallish cubes of cooked butternut, and some pumpkin seeds. yummy!

Does anyone have a "lekker" couscous recipe? I have a basic idea of how to make the couscous but have no idea what else to add, for eg. feta, vegetables, etc. And also do you add butter or sauce to the couscous?
