I saw a recipe a while ago combining fish and butternut or pumpkin, but I could not seem to find the recipe again. So thought I would wing it, as most of my recipes are.
2 eggs whisked
1 cup flour
200 grams haddock (I used the petite haddock and used about half the box)
about 5 mls Cinnamon
olive oil for frying
Bring butternut to the boil in a pot of water. And the haddock in a separate pot of water and a little milk.
The butternut is cooked once a knife goes through very easily. Drain and mash.
The haddock will flake when cooked through. Remove from the milky water mix and remove skin then flake.
Mix the cooked butternut, haddock, flour and eggs in a bowl.
Heat the oil in a pan, enough to coat the pan. You could use a nonstick frying pan, then use less oil.
Fry on both sides till golden brown.
Drain on roller towel on paper and allow to cool.
If to your taste season with cinnamon.
