Brown Butter Wedding Cookies

The cookies for people who do not think they cannot bake cookies. You only need six ingredients.

Ingredients:

  • 1 cup butter
  • 1 cup walnuts
  • ½ teaspoon SALT
  • 1½ cups caster sugar, divided
  • 2 cups flour
  • 1 teaspoon vanilla essence

Method:

  • Melt the butter in a small pan over medium heat. Stir frequently until butter froths and begins to brown. Do not walk away; the butter can quickly burn from golden brown to. Once the butter is golden, immediately pour it into a large heat-resistant bowl and refrigerate until it starts to solidify, about 30 minutes.
  • Meanwhile, chop one cup of walnuts very finely.
  • Add a teaspoon of salt and a cup of caster sugar to the bowl with butter.
  • Use an electric mixer at high speed and beat for about three minutes.
  • Add two cups of flour and beat on low speed until the dough is thick and smooth.
  • Fold chopped nuts and 1 teaspoon of vanilla into batter.
  • Cover bowl with plastic and refrigerate dough until firm, about one hour.
  • Preheat the oven to 160 ° C.
  • Roll the dough into small balls.
  • Place on a greased baking sheet.
  • Bake for 20 - 22 minutes.
  • Allow to cool slightly and sift over remaining caster sugar.

Crispy Chocolate Chip Oatmeal Cookies

Oatmeal chocolate chip cookies with rice crispy cereal. You will love the crispy surprise! These cookies are fun to make and fun to eat!

Ingredients:

  • 1 cup all-purpose flour
  • ¼ tsp. Salt
  • ½ tsp. Baking powder
  • ½ tsp. Baking soda
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • ½ cup softened unsalted butter
  • 1 egg
  • 1 tsp. vanilla
  • 1 cup old fashioned oats
  • 1 ¼ cups Rice Krispies cereal
  • 1 cup chocolate chips

Instructions:

  • Preheat the oven to 375 degrees. In a medium bowl, whisk together the flour, salt, baking powder, and baking soda. Combine butter and sugars in your mixing bowl. Beat until smooth. On low, add in egg and vanilla extract. Beat until combined.
  • Slowly add in the dry ingredients. Stir in the oats, chocolate chips, and cereal. Don't over mix. You don't want to crush the cereal too much.
  • Scoop dough into balls and place on a cookie sheet lined with parchment. Bake for 10-12 minutes! Allow to cool for a minute on the cookie sheet. Move to a cooling rack and enjoy.
